I’m planning on doing a full driving tour around the USA and Canada. In Canada, including the Dempster highways and other dirt highways.

There’s plenty out there that come preloaded with all of North America (especially the newer ones), when you shop around it’ll tell you what region the product covers.

If you’re asking if you can add in your own routes that you know won’t show up, yes, I believe this is possible, search about hacking GPS, or there are different programs of certain receivers that should allow it

Yes sure, You find GPS with maps of US and Canada loaded in it. And there are different voices which guide you while keep driving. Its really a very good device for you to buy. You wont miss any of the routes for sure. Even if you miss you can correct it back again. Go on.
